Redmond Farm is the home of FARMHOUSE GROCER and located in Craanford, County Wexford, is approximately five miles outside the market town of Gorey. It supplies much of the beef, salads, and vegetables used in the hotels, the Ashdown Park and Amber Springs and FARMHOUSE GROCER.
Redmond’s currently supply a large portion of their hand-reared beef and naturally grown vegetables and salads to both hotels and to FARMHOUSE GROCER. All beef eaten in a Redmond hotel is supplied by the Redmond Family Farm.
On the farmland in the parish of Craanford, some 1,000 head of free-range, grass-fed Angus Beef cattle are being reared. “For us, provenance is key,” says Tommy Redmond. “Customers need to know the origin of the excellent quality of food we have on offer. Over a very difficult covid period and throughout lockdown we extended our takeaway offerings and really through the collaboration with the team in the Ashdown Park the idea around ready to go dishes that can be popped in the oven or kept for the freezer was born. The food is convenient, using fresh, sustainable ingredients and if it isn’t coming direct from our farm it is coming from a local Wexford producer so the provenance is there. It’s an exciting project and one we are very proud of.”
The phrase ‘farm to fork’ really applies to Redmond Hotels, but really it is from the farm gate to the hotel plate. Now it’s available to purchase online across Ireland. It isn’t unusual for the farm team to pick ingredients in the morning, deliver to the hotels or FARMHOUSE GROCER to have it either plated and served that evening or made and packaged for next day delivery nationwide. You can’t get fresher and more Irish than that!
“Many times, I have been working in the field to receive an email order for ten heads of Cos Lettuce,” said farm manager Michael “rooster” Rossiter. “It can be out of the ground and down to the hotel within 20 minutes, so it really is farm to fork.” Redmond Farm the home of FARMHOUSE GROCER is thriving and delivering quality ingredients that go towards making delicious traditional dishes.
